• 1 onion
  • 2 cloves of garlic
  • ¾ of a cup Olive oil
  • Few basil leaves (thin chopped)
  • Salt and pepper
  • 1 teaspoon of brown sugar
  • A big jar of organic Greek tomatoes
  • A tablespoon of Greek yogurt
  • Few olive oil based rusks


Add in a pan the onion and the garlic chopped with half the amount of olive oil. You stir well for few minutes until they are soft but not brown. Add the basil leaves and stir for another minute. Add the tomatoes sauce/juice and leave it to boil until you get the desired thickness of the soup. Finally, you add the sugar and the rest if olive oil and you leave it to boil for two more minutes. The soup is ready. Enjoy it with a tablespoon of Greek yogurt deepen in the middle of your soup and some olive oil rusks. Tip. Always add in your dish some olive oil at the end because it gives extra fresh taste and keeps all the nutrients of the olive oil.
